Ingredients

  • 2 Tbsp. salted butter, softened
  • 8 oz. bittersweet chocolate, coarsely chopped
  • 3/4 cup salted butter, at room temperature
  • 3 eggs
  • 3 egg yolks
  • 1/3 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 Tbsp. all-purpose flour
  • Powdered sugar and/or unsweetened cocoa powder (optional)
  • Strawberries (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Grease six 8- to 10-oz. ramekins or small cups with the 2 Tbsp. softened butter.
  2. Place the ramekins in a 15x10-inch baking pan. In a small saucepan, combine the chocolate and 3/4 cup butter. Cook over low heat, stirring occasionally, until the chocolate melts.
  3. In a large mixing bowl, beat the eggs, egg yolks, sugar, and vanilla until thick and pale, about 8-10 minutes.
  4. Fold in about one-third of the chocolate mixture into the egg mixture. Then fold in the remaining chocolate mixture and flour.
  5. Spoon about 2/3 cup of the batter into each prepared ramekin.
  6. Bake for 12 minutes or until the edges feel firm. The centers should still be slightly jiggly.
  7. Let cool in the ramekins for 2-3 minutes. Loosen the edges with a knife and invert onto plates.
  8. Sift with powdered sugar and/or cocoa powder, if desired. Serve warm with sliced strawberries, if you like.
