Ingredients
- 2 Tbsp. salted butter, softened
- 8 oz. bittersweet chocolate, coarsely chopped
- 3/4 cup salted butter, at room temperature
- 3 eggs
- 3 egg yolks
- 1/3 cup granulated sugar
- 1 tsp. vanilla extract
- 1 Tbsp. all-purpose flour
- Powdered sugar and/or unsweetened cocoa powder (optional)
- Strawberries (optional)
Instructions
- Preheat oven to 425°F (220°C). Grease six 8- to 10-oz. ramekins or small cups with the 2 Tbsp. softened butter.
- Place the ramekins in a 15x10-inch baking pan. In a small saucepan, combine the chocolate and 3/4 cup butter. Cook over low heat, stirring occasionally, until the chocolate melts.
- In a large mixing bowl, beat the eggs, egg yolks, sugar, and vanilla until thick and pale, about 8-10 minutes.
- Fold in about one-third of the chocolate mixture into the egg mixture. Then fold in the remaining chocolate mixture and flour.
- Spoon about 2/3 cup of the batter into each prepared ramekin.
- Bake for 12 minutes or until the edges feel firm. The centers should still be slightly jiggly.
- Let cool in the ramekins for 2-3 minutes. Loosen the edges with a knife and invert onto plates.
- Sift with powdered sugar and/or cocoa powder, if desired. Serve warm with sliced strawberries, if you like.
