As I sipped Negronis and twirled midnight spaghetti at the newly opened Carlton in Milan, UNESCO's monumental decision to designate Italian cuisine an Intangible Cultural Heritage of Humanity weighed heavily on my mind.

Famed mixologist Salvatore Calabrese, who helped design the apertivo-led menu, ensured every drink was expertly crafted and delivered with finesse. The menu, separated by decade of origin, paid homage to Italy's rich culinary history.

Under an airy greenhouse-like dome, the hotel's restaurant served artichokes and seafood-forward pastas that delighted the palate. The stylish clientele, a mix of locals and international visitors, hinted at what the hotel would be like during Milan Fashion Week or Salone del Mobile.

Upstairs, the rooms were just as stylish as the clientele. Architects Philip Vergeylen and Paolo Moschino, in collaboration with Olga Polizzi, Rocco Forte Group's director of design, transformed the former Baglioni hotel into a haven of eclectic, warm, and comfortably maximalist charm.
